NCFC:Recipes/Adi Friedman's Dressed salmon
Dressed salmon, of which you guys bought several, will need two days in the refrigerator to thaw out. Top shelf is a bit warmer than the bottom of your refrigerator. Here is a simple recipe to consider for your dressed salmon. Get hold of a fresh pineapple, and cut it up into bits. Stuff as much as you can inside the dressed salmon, cook on the grill or in the oven. You might want to consider a sheet of foil to catch any pineapple that falls out. In the oven, you can loosely wrap, I suppose, but on the grill I never wrap it, so it catches the smoky flavor. That's it -- no spices, no anything else. Salmon and pineapple go well together. Your dressed salmon is clean and ready to go after thawing - you don't need to do a thing to it.
The dressed salmon makes very good poached salmon, also.
